Garlicky Grilled Vegetable Kebabs

Garlicky Grilled Vegetable KebabsYou will need:

  • 3/4 cup dry red wine
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 3 shallots, peeled
  • 5 cloves garlic, peeled
  • 1 teaspoon Worcestershire sauce
  • /2 teaspoon rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 16 cherry tomatoes
  • 16 cremini or button mushrooms
  • 1 large onion, cut into 12 chunks
  • 1 medium orange bell pepper, cut into 12 chunks
  • 1 medium green bell pepper, cut into 12 chunks
  • Broccoli or cabbage slaw
  • Ramen noodles, crushed

Combine wine and next eight ingredients in a food processor. Process until smooth. Place all vegetables in a single layer in a shallow glass baking dish. Pour marinade over vegetables and allow to marinate at room temperature for at least 1 hour. Divide slaw into serving bowls and set aside. Thread vegetables alternately on short skewers, leaving 2 inches on one end bare. Grill 6
inches from heat source for 10 minutes, basting frequently with leftover marinade. Sprinkle
crushed Ramen noodles over slaw. Serve immediately by sticking bare ends of vegetable
skewers into slaw.

Yield: 4-6 servings
